Very Simple Cupcakes

I have been making cupcakes since I was tiny and have always followed this basic recipe. It is also very child friendly if you want to get your little ones involved!!



Ingredients (for 12 cupcakes):

100g Self Raising Flour
100g Caster Sugar
100g Unsalted Butter
2 Eggs
1tsp Vanilla Extract

Method:

Cream together the butter and sugar until pale and fluffy

Add the eggs and vanilla extract and beat together. 
Tip; add a spoonful of the flour if it starts to split.

Add the rest of the flour and fold in, being careful not to knock the air out.

Put around a table spoon into each cake case and bake in an 180' oven for around 15 minutes or until golden brown.


The best thing about this recipe is that it is so adaptable! You can add chopped fruit, chocolate chips, anything you want. You can also try lots of different flavours of icing too!
